3⁄4 cup of quinoa (red or white) rinsed well
1 can of diced tomatoes
1 can of black beans drained and rinsed
1 yellow cooking onion diced
2 cloves of garlic grated or finely minced (or 2 teaspoons of garlic powder)
2 cups of chopped veggies- peppers, mushrooms, corn etc.
3 cups of vegetable broth (I have used plain water in a pinch)
2 teaspoons of chili powder
2 teaspoons of ground cumin
Sea salt and ground black pepper to taste
Add all ingredients to crockpot stir and leave for 3-4 hours on high or 6-8 hours on low. Top with parmesan cheese, daiya dairy free cheese or plain greek yogurt or sour cream. The leftovers are great with nachos!
