Fajita Time

2 organic, free-range chicken breasts, boneless, skinless, sliced

Fajita Spice (you can try Simply Organic Fajita seasoning, or you can make your own blend below)

1 red bell pepper, sliced

1 green bell pepper, sliced

1 orange/yellow bell pepper, sliced

1 red onion, sliced

1 tablespoon olive oil

Heat olive oil in a pan, add chicken breast slices and seasoning and a 1/4 cup of warm water and cook 10-12 minutes until fully cooked. Add onions and peppers a few minutes before chicken is done and toss until softened. Serve over rice or in whole grain or gluten-free corn tortillas with guacamole or greek yogurt, enjoy!

DIY Fajita Spice

1 1/2 teaspoons of sea salt

2 teaspoons of freshly ground black pepper

1/2 teaspoon of parsley

1/2 teaspoon of paprika

1 1/2 teaspoons of oregano

1/2 teaspoon of garlic powder

1/2 teaspoon of onion powder

2 tablespoons of chili powder

1 tablespoon of ground cumin

Whisk ingredients together and store in an air-tight glass container, you can use 1 1/2 to 2 tablespoons in place of a seasoning package.
