Green Salad with Roasted Chickpeas

-1 tbsp olive oil

-1/2 cup chickpeas

-3 to 4 cups mixed greens

-1/2 cucumber sliced or spiralized

-2 tbsp sliced red onion

-1/4 cup feta cheese

Warm a pan on low/medium heat and add 1 tbsp of olive oil, add 1/2 cup of chickpeas (drained and rinsed) and stir until golden brown and set aside. 

Add your greens to a bowl with cucumbers, red onion, and feta cheese.


Drizzle with extra virgin olive oil, apple cider vinegar or a squeeze of lemon, and sprinkle with Herbamare or sea salt and top with your roasted chickpeas!
