No-Noodle Minestrone Soup


1-2 tablespoons of olive oil or ghee

4-5 carrots, peeled and sliced

3-4 celery stalks, thinly sliced

1 sweet onion, finely diced

2-3 cloves of garlic, peeled and finely grated

1 can of diced tomatoes

1 litre of chicken or vegetable broth or homemade bone broth

1 can or 1.5 cups of white kidney beans (cannellini beans) rinsed

Sea salt & freshly ground black pepper

Sautee onions, garlic, carrots and celery in olive oil or ghee on medium heat, until softened. Add diced tomatoes, broth and beans. Simmer on medium/low heat for 30 minutes. Season with sea salt & pepper. 

Optional:

If you have picky eaters or prefer a creamier soup, blend the soup in batches after cooking (throw a tea towel over the top of the blender and allow the heat to vent, careful not to burn yourself!)
