Veggie Stir Fry

1 red bell pepper, sliced lengthwise into strips

1 orange bell pepper, sliced lengthwise into strips

1 sweet onion, thinly sliced

2 cloves of garlic, grated or finely minced

2 portobello mushrooms, thinly sliced

2 tablespoons of olive oil or sesame oil

2 tablespoons of sesame seeds

Tamari (or coconut aminos)

2 cups of jasmine rice


Cook rice per package directions.

Heat oil on medium-high heat and saute onions, garlic, peppers until softened. Add in portobello mushroom strips. Cook until fragrant and softened. Add 1 tablespoon of tamari to the pan and toss. Remove from heat. Serve veggies on top of rice and sprinkle on your sesame seeds. Enjoy!
