Crazy for Guacamole!

1 ripe, but not too ripe, perfect medium sized avocado 1/2 lime, juiced 1 clove of garlic, finely grated 1/4 teaspoon of sea salt pinch of cayenne pepper Optional: diced tomato, cilantro, red onion, jalapeno.   Scoop out and mash your avocado, add lime juice, garlic, sea salt and cayenne pepper, stir to combine. Enjoy with tortilla chips, fresh veggies, on wraps or sandwiches, delish!         There is a HUGE disconnect from where our food grows to where it meets us on the grocery store shelves. Cinnamon-Oat & Triple Berry Bliss Smoothies

Cinnamon Oat Smoothie 1 1/2 cups of plain kefir (or dairy-free milk of choice) 1/4 cup of rolled oats 1 frozen banana (don't like banana? Try steamed cauliflower!) 2 soaked dates 1/2 teaspoon of cinnamon Blend and enjoy!    Triple Berry Bliss Smoothie 1 1/2 cups of coconut water or cooled green tea 1 cup of fresh mixed berries (raspberries, blueberries, and strawberries) 1 handful of ice (you can omit ice and use frozen berries if you'd like) 1-2 teaspoons of raw honey 1 teaspoon of bee pollen Blend & enjoy!   *You can always add 1 scoop of protein powder (I use Garden of Life) and/or a handful of greens in any smoothie recipe!

Fajita Time

2 organic, free-range chicken breasts, boneless, skinless, sliced Fajita Spice (you can try Simply Organic Fajita seasoning, or you can make your own blend below) 1 red bell pepper, sliced 1 green bell pepper, sliced 1 orange/yellow bell pepper, sliced 1 red onion, sliced 1 tablespoon olive oil Heat olive oil in a pan, add chicken breast slices and seasoning and a 1/4 cup of warm water and cook 10-12 minutes until fully cooked. Add onions and peppers a few minutes before chicken is done and toss until softened. Serve over rice or in whole grain or gluten-free corn tortillas with guacamole or greek yogurt, enjoy! Very Berry Smoothie Bowl

1 cup of frozen strawberries (or mixed berries) 1/2 cup frozen blueberries (or mixed berries) 1 frozen banana 1 1/2 cups of dairy -free milk (I use coconut) 2-3 dates, soaked 1 tablespoon of chia seeds Blend all ingredients, pour into a bowl and top with fresh sliced fruit, shredded coconut, goji berries, chopped nuts, cacao nibs etc. Enjoy!

Salad in a Jar

Honey Dijon Garden Salad 2 servings 1 cup of chickpeas, (if using canned, drained & rinsed) 1/2 cup of shredded red cabbage 1 cup of diced cucumbers 1/2 cup halved baby tomatoes (or diced vine tomatoes) 2 small radishes thinly sliced   Dressing: 1 cup of extra virgin olive oil 1/3 cup of apple cider vinegar juice from 1/2  lemon pinch of sea salt pinch of black pepper 1/2 teaspoon of dijon mustard 1 teaspoon of raw honey Whisk dressing ingredients together and set aside. You can store extra dressing in a glass jar up to one week in the fridge.
